Mango Mascarpone Parfait

Makes 4 servings

Getting started

Equipment you will need: food processor or blender, 2-3 small bowls, mixing utensil, parfait glasses

Do right away when you get home: gather utensils, equipment and ingredients



2 cups plain 2% Greek yogurt

2 Tbsp. mascarpone cheese


2 Tbsp. brown sugar

2 Tbsp. fresh lime juice

2 ripe mangos


4 gingersnap cookies

2 Tbsp. flaked sweetened coconut



1. Combine yogurt and mascarpone in a small bowl. Set aside.
2. Peel and chop mangoes. Place in small bowl. Add sugar and lime juice and toss to coat. Set aside.

3. In a food processor, combine gingersnaps and coconut. Process until fine.

4. In each parfait cup, place ¼ cup yogurt mixture, ¼ cup mango mixture and 1 ½ tsp. gingersnap mixture. Repeat layers with remaining ingredients. Serve.

Tips: Substitutions: You can easily substitute any citrus juice instead of the lime juice (orange, lemon, etc.). Ricotta cheese can be a substitute for mascarpone. Shopping list: 2 medium ripe mangoes Gingersnap cookies (4) 2% Greek Yogurt Mascarpone Cheese
